Hey, friends! Hope your week has been good so far. Today I have for you a lovely breakfast option—Muesli. Say what? Yeah, I’m not real sure I can pronounce it correctly either. Anyway, it’s basically a wholesome cereal that’s healthy and fairly low in sugar. It’s chock-full of oats, seeds, and nuts + some dried fruit and shredded coconut.

On the dried fruit front, I tossed in some raisins because they have no added sugar, which is awesome. But, then I couldn’t really help myself, so I added some dried cranberries—for color, I told myself. Sure there’s some added sugar there, just as with the shredded coconut I added. To each their own, eh? Feel free to just add more raisins, or other dried fruits that have no added sugar. Or skip the dried fruit entirely. Booooring! ;)

So really, it’s that easy. Choose your grains, dried fruit, seeds, nuts, and spice and toss it all together in a bowl. This Muesli recipe makes about 4 cups, but it can easily be halved or double. Do whatever works for you. Heck, mix and match your ingredients—make it your own. Not going to lie…I’m looking forward to making a pumpkin spice version in just a few months. Yessss!

Okay, so you’re wondering how exactly you’re supposed to eat this Muesli, right? I pour some unsweetened almond milk over my bowl of Muesli and let it sit for about 5-10 minutes, so that the oats can start to soak up the milk and get nice and soft. YUM! Then just dig in. Easy breezy. Muesli is also delicious with some fresh fruit added in…banana, blueberries, you name it. Up to you.

Honestly, Muesli does taste very wholesome + kind of earthy. And I don’t mean that in a bad way at all! It just tastes really good for you. The milk-soaked oats, the sweet bite of raisins and cranberries, along with the crunch from all the nuts and seeds. Just absolutely divine! I’m definitely looking forward to another bowl for breakfast in the morning. Score!

Ingredients
  • 1½ cups oats
  • 1 tsp. cinnamon
  • ½ cup raisins
  • ¼ cup of each of the following:
  • Dried cranberries
  • Shredded coconut
  • Chia seeds
  • Ground flax seed
  • Pumpkin seeds
  • Sunflower seeds
  • Almonds
  • Walnuts
  • Pecans
  • Pistachios
  • Milk + fresh fruit, for serving
Instructions
  1. Add all the ingredients, except for the milk + fresh fruit, to a large bowl and mix until evenly combined. Store Muesli in an airtight container.
  2. To serve, add about ½ cup Muesli to a bowl with some milk + fresh fruit. Let sit for 5-10 minutes. Enjoy!
