Starting the New Year off right!
This quick and easy parfait can be enjoyed as part of a healthy breakfast or for an epic mid-morning snack. I choose the latter because my go-to breakfast is always a smoothie (click here, here, and here for inspiration). As I mentioned in my last post, I want to start eating healthier on a regular basis, so luckily for the both of us, this parfait makes choosing healthy incredibly easy.
Every evening I set things up to help make the following day a success, which means that I take a bit of time to prepare smoothies for breakfast along with a mid-morning snack for both myself and my hubby. By doing this, I’m ready to go in the morning and don’t have to think twice about what I want to eat. Failing to plan = Planning to fail. I live by that. Maybe you do too?
I should also mention that I always ensure we have lunch for the following day too. Sometimes we have leftovers from dinner, which make a fabulous lunch (easy, too!). If we don’t have any leftovers, then our go-to is a veggie wrap and a piece of fruit. Lately, we’ve been loving our veggie wraps, so every week when we go grocery shopping we toss some extra green bell peppers and tomatoes in the cart, along with hummus and tortillas.
Prepping for success is easy. Sure it takes a little time, but it’s so worth it.
So, this parfait. First of all, it’s made with Greek yogurt, which is amazingly thick and creamy. Sooo much better than regular yogurt…zero comparison, in fact. We recently made the switch and are we so glad we did. Mixed in the yogurt is a small amount of chia seeds, ground flax seed, and nut butter. I use either peanut butter or almond butter to add an extra layer of flavor and a bit more protein. Now, Greek yogurt is packed with protein, but a little more can’t hurt. Toss in a few berries, raisins, nuts, and seeds and it’s a done deal.
This parfait is super action packed and will keep you full and going all morning long, which in turn keeps you from making poor decisions…such as grabbing a piece of chocolate or two from the candy jar at work. I should know because, well, I’m that girl and I’ve been battling those candy cravings all week. Happy to report that I was stronger than my cravings, which means I haven’t had an ounce of chocolate all week. Yay for a healthier New Year!
Mixed Berry Greek Yogurt Parfait
Yields 1 serving
- 1 tsp. chia seeds
- 1 tsp. ground flax seed
- 1 tbsp. nut butter
- 1 tbsp. (or so) raisins (I use a mix of regular + golden raisins)
- ½ cup vanilla Greek yogurt
- ¼ cup fresh mixed berries
- 1/8 cup (2 tbsp.) nuts and seeds
Add the chia seeds, ground flax seed, nut butter, raisins, and yogurt to a small (1-cup) bowl. Mix until well combined. Top with the berries, nuts, and seeds. Enjoy immediately, or store in the refrigerator (See note below).
If you make your parfait ahead of time (like I do), wait to add the nuts & seeds until you’re ready to eat, or else they may lose their crunch-factor.
