I think the holiday season has me in a healthy state of mind, which is quite opposite the norm, if I do say so myself. When cold weather hits, I’d much rather stay curled up under the blankets of my warm bed instead of heading to the gym for a workout, so right now I’m trying to balance that with at least trying to eat healthy. We’re really trying to get back into the swing of things with our workouts, but boy does warmth have a way of winning me over in the early morn.

You know what tastes delightful after an early morning workout? This Strawberry-Pear Apple Butter Smoothie. Duh! This is a deviation from my typical Banana & Peanut Butter Smoothie, or my Chocolate & Pumpkin Spice Smoothie, both of which are fabulous. Sometimes you just have to switch it up…especially when you have over-ripe pears staring at you from the fruit bowl.

I’ve been harboring apple butter in my pantry for weeks now, so finally I drug it off the shelf so I could add some to this smoothie. What a great sweetener it turned out to be. And the flavor!! Super yum! Now-a-days we’re rocking a fully-stocked pantry, which I love because I can toss a little of this and a little of that into my smoothie. Hello goodness!

So, what is the little of this and little of that, you might be wondering. Hmm, well, everything from almond butter and chia seeds to nuts and dried fruit. Back to basics first, though. I stared this smoothie with orange juice and greek yogurt, which is a new favorite of mine…so, so thick! Let’s not forget the oatmeal for a bit of extra fiber and whole grain goodness. I also added a banana because, well, isn’t that like a prerequisite for smoothies? Not a frozen banana because my blender can’t do all that jazz. I’m on my second blender in like a year…soooo, you know.

This smoothie is chock-full of healthy ingredients that’ll keep you going all morning long. I always take a mid-morning snack with me to work, but oftentimes I don’t eat it until lunch because smoothies really do the trick with keeping you full.

Strawberry-Pear Apple Butter Smoothie

Yields 2 (16 oz.) smoothies

Ingredients

  • 2/3 cup orange juice
  • 1/3 cup water + more, if needed
  • 1/3 cup vanilla Greek yogurt
  • 1-2 tbsp. apple butter
  • 1 cup frozen strawberries—thawed (in the microwave)
  • 1 pear—seeded and chopped
  • 1 ripe banana
    1 tsp. cinnamon
  • 1 tbsp. chia seeds
  • 1 tbsp. ground flax seed
  • 1 tbsp. peanut butter
  • 1 tbsp. nuts (I used walnuts and pecans)
  • 1 tsp. pumpkin seeds
  • 1 tsp. sunflower seeds
  • 2 prunes (dried plums)
  • 2 dates
  • 1/3 cup old-fashioned oats—cooked (in the microwave)
  • 1-2 cups ice cubes

Directions

Place all ingredients in the blender and blend on high until smooth. Pour and serve.

Note

If you have an inexpensive blender like I do, it’s best to blend in stages. I typically blend before and after I add the oatmeal and then, of course, after adding the ice. Add more water through the pour hole, a little at a time, if needed to achieve a smooth consistency.
