Good day to you! As you may have noticed…it’s been a few days. I’m still struggling a bit with balancing work and blogging. Lately, I’ve been so darn tired after working, making dinner, and cleaning up that I just fall right asleep as soon as I sit down. Tell me…how do kids fit into all this? I tip my hat off to all moms who work full-time plus blog. Whoa! Slowly but surely…I’ll get there. Ever the optimist! :o)
Hey, guess what?! Spring has arrived—at least for today! It was a perfect 70 degrees. My Love and I got out and enjoyed a McDonald’s coffee which was fabulous because it’s been about a month since our last McCafé. Then we headed to the mall to check out a few things we have our eye on. I love that Francesca’s boutiques are popping up all around here. When I was a kid, I couldn’t find my name anywhere or on anything…so it’s nice to see it out there for once. You know I had to snap a picture. Call me dorky!
After that, we enjoyed an incredibly peaceful afternoon. We sat in our recliners with the sun shining in on us—I read and My Love listened to some podcasts. Speaking of reading, I LOVE my current book. Can’t wait to share it with you!
Since it’s Spring (fingers crossed!), let me share this lovely and bright meal with you. Love that it’s so colorful. We eat with our eyes first, so this is definitely a winner. Of course it’s also quick, easy, and filling.
The inspiration for this bagel sandwich came from a bagel shop we used to frequent. I always ordered a bagel sandwich called The Yenta Loves to Chat. Such a unique name! It was similar to this sandwich here, but it included bean sprouts. Along with the Yenta, I ordered an incredible Garbage Salad—ugly name, but gosh was it to.die.for.
So, buy your favorite bagels to start. If you have a Safeway grocery store near you, please for the love of life, go buy some fresh everything, sesame, and Parmesan cheese bagels. Oh my! We made these with some everything bagels. Toast those babies and top each half with your favorite store-bought (or homemade) hummus. Then add some veggies and you’re good to go.
That’s it! Told you this was quick and easy. Makes for a superb lunch as well. I love the tender bagel, the creaminess of the hummus and avocado, and the crunch of the veggies. One-stop goodness here! Super healthy and light, but incredibly filling. Okay, so maybe bagels aren’t healthy…but at least there’s no cream cheese involved here. Go ahead and dig in!
Hummus & Veggie Bagel Sandwiches
Yields 4 Sandwiches
- 4 bagels—sliced and toasted
- 1 container of your favorite store-bought or homemade hummus
- 1 cucumber—cut into half-moons
- 1 avocado—sliced
- 4 carrots—peel the skin and then peel into strips (using a vegetable peeler)
- Salt to taste
Spread each bagel half with a generous portion of hummus. Top 4 of the bagel halves with cucumber half-moons and 4 with avocado slices. Sprinkle the veggies with salt to taste. Lastly, top each avocado half with the carrots strips. Gently flip the cucumber halves on top to finish the sandwiches. Cut each bagel sandwich in half and enjoy!
