I love comfort food, and grilled cheese makes good comfort food. Avocado grilled cheese? Even better! Yesterday I made a loaf of Irish Oatmeal Soda Bread specifically for this meal. To.die.for I tell you. Just look at that cheese oozing out. Goodness overload!

The soda bread was absolutely perfect for this meal because it’s hearty and flavorful. The avocado was super duper ripe and delicious with just a sprinkle of salt. I loaded each sandwich with about ¼ cup of cheese…well, maybe a little more. What’s grilled cheese without a humongous heap of cheese? :o)

To complete the meal I baked up a side of French fries to dip in ranch dressing. If you’ve never dipped fries in ranch you are missing out! Missssing out, I promise you. I may or may not have eaten a few too many ranch-dipped fries. I was positively stuffed after this meal. Then again…isn’t that the sign of comfort food gone right? Why yes, yes it is!

During our meal, I commented to S that our kids will love this meal one day. I can’t imagine a kid not devouring this meal. A super delish meal that even kids will love…spells perfecto to me! Go, run…enjoy!

Avocado Grilled Cheese

Yields 4 servings

Ingredients

  • 8 slices of Irish Oatmeal Soda Bread (bake it in a 9×5 loaf pan for 65 minutes)
  • Butter
  • 1 super ripe avocado—mashed with a sprinkle of salt
  • 1 cup shredded cheddar cheese

Directions

Slather butter on 1 side of each slice of bread. Place 4 slices of bread butter-side down on a plate—next, spread a ¼ of the mashed avocado and a ¼ cup of cheddar cheese onto each slice. Top each sandwich with a slice of bread butter-side up. Heat a non-stick skillet over medium heat and add 2 sandwiches. Cook until golden brown. Gently flip and cook until the other side is golden brown. Repeat for the remaining 2 sandwiches.
