Just walking out the door in the morning reminds me of why I love fall so much. The air is crisp and cool, and I love taking a moment to breathe in the freshness. Everyday I look forward to getting home to sit in my comfy recliner, cuddle up with a warm blanket, and read a good book all while a cool breeze flows through the window. The only other necessity is a mug of hot coffee to wrap my hands around. 

While browsing Pinterest, I came across a simple recipe for homemade pumpkin spice coffee, and couldn’t believe I hadn’t thought of it myself. I quickly brewed a pot of coffee and sat down to enjoy a cup. It was fall in a cup. Absolutely delicious! It was spiced just enough to warm my soul without being overpowering. Another Pinterest find that is a nice addition to this coffee is caramel coffee creamer. It adds just the right amount of sweetness to the pumpkin spice coffee.

This coffee was perfect in my “boo” mug. Love using this around Halloween! My Love and I bought it at Starbucks in Manhattan, NY several years ago. I totally have a thing for coffee mugs! I hope you have a favorite mug to enjoy this coffee in, too. Go ahead and indulge one sip at a time!

Pumpkin Spice Coffee with Caramel Creamer

Yields about 2-3 mugs of coffee and 1 cup of creamer 


For the Pumpkin Spice Coffee

  • Enough water for 6 cups of coffee
  • 5 tbsp. + 1 scant tbsp. Ground Coffee
  • 3/4 tsp. Pumpkin Pie Spice
  • For the Caramel Creamer
  • 1/3 cup Sugar
  • 1 cup Half & Half, Warmed


For the Pumpkin Spice Coffee

Fill the coffee pot with enough water for 6 cups. Add ground coffee and pumpkin pie spice to coffee filter and mix well. Brew the coffee.

For the Caramel Creamer

Place sugar in medium-sized pot over medium heat. Shake pot to level the sugar. Let cook until the edges of the sugar begin to melt, about 3-5 minutes. Once the sugar begins to melt, whisk continuously until the sugar turns to liquid. Continue to whisk while adding the half & half. Be careful because the half and half will bubble-up immediately. Remove from heat once completely combined.* Add desired amount of creamer to a mug of pumpkin spice coffee and enjoy! Store remaining creamer in an airtight container in the refrigerator. 

If the sugar clumps up, just keep whisking. It will eventually melt completely.
